Ingredients (for 10 people)

  • 5 Pears (approx. 1 kg)
  • 550 Sugar
  • 7 Eggs (size M)
  • 600 Flour
  • 1 pinch Salt
  • 1 packet(s) Vanilla sugar
  • 400 Butter
  • 1 tsp. Ground cinnamon
  • 3x500 Fromage Frais Natural
  • 1 packet(s) Pudding powder "caramel flavor" for cooking
  • 25 candied ginger
  • 50 Hazelnut croquant
  • Grease and flour for the tray


Step 1:
Peel pears, cut in half lengthwise and remove core with a ball corer. In a large saucepan, bring 2 liters of water to a boil with 100 g sugar, add pear halves, cover and cook over low heat for about 15 minutes.

Step 2:
In the meantime, separate 1 egg for the base. Cover the egg whites and put them in a cool place. Mix flour, 300 g sugar, salt, vanillin sugar, 1 egg, egg yolk, 300 g butter and cinnamon in a large mixing bowl, first with the dough hooks of the hand mixer, then quickly with your hands to form crumbles. Spread about two-thirds of it on a greased, floured deep baking sheet (about 35 x 40 cm) and press down to form an even base.

Step 3:
Drain the pears, allow to drain and cool. Then cut several times with the bulge facing up. Whip 100 g butter and 150 g sugar. Stir in Exquisa QuarkCreme Natur and custard powder. Stir in 5 eggs and the egg whites set aside one by one. Spread the cheese mixture on the pastry base. Spread pear halves on top. Finely chop ginger and add to remaining crumble mixture with brittle. Spread crumble on cheese mixture and bake in preheated oven on lower rack (E-Herd: 175 °C/Umluft: 150 °C) for 1 to 1 1/4 hours.

Step 4:
Let cake cool on a cake rack, cut into approx. 30 pieces and arrange.
